Dirty Rice with Green Peppers and Onions

Ingredients
  

  • 1 cup uncooked rice
  • 2 lbs ground meat I used venison
  • 2 green peppers
  • 1 lg sweet onion
  • 2 tbsp avocado oil
  • 2 tbsp minced garlic
  • 2 tbsp tomato paste
  • 1/2 tbsp cumin
  • 1/2 tbsp smoked paprika
  • 1/2 tbsp Italian seasonings
  • 1 container Pico de gallo
  • 1 pkg Mexican 4 cheese blend

Equipment

  • Rice cooker
  • Large Sautee Pan
  • Cutting board
  • Sharp knife

Method
 

  1. Cook rice in rice cooker. This can be done in advance if desired.
  2. Dice green pepper and onion.
  3. Add oil to pan on medium high heat.
  4. Sautee peppers and onions until they start to become tender.
  5. Push vegetables to the edges of the pan and add meat.
  6. Brown meat and stir into vegetables.
  7. Add seasonings and stir into mixture.
  8. Add tomato paste and mix in thoroughly.
  9. Fold rice into mixture.

Notes

Serve topped with Pico de gallo and Mexican 4 cheese blend.
