Creamy Garlic Tomato Chicken Casserole

Ingredients
  

  • 5 lbs chicken breasts
  • 2 pkgs red, yellow, and orange bell peppers
  • 1 pint heavy whipping cream
  • 2 tbsp avocado oil separated
  • 2 tbsp minced garlic
  • 1 tsp cumin
  • 1 tsp coriander
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 2 tbsp butter
  • 1 can tomato paste

Equipment

  • 1 Sharp knife
  • 1 Cutting board
  • 1 Large Sautee Pan
  • 1 Large rectangular baking pan
  • Measuring spoons
  • 1 Gallon Storage Bag

Method
 

  1. Dice chicken and place in storage bag with 1 tablespoon of avocado oil and dry seasonings. Massage to mix thoroughly and set aside for at least an hour.
  2. Cut bell peppers into strips
  3. Heat avocado oil on high until just smoking
  4. Cook chicken letting it brown
  5. Remove chicken and set aside
  6. Reduce heat to medium and add butter
  7. Sautee minced garlic until tender
  8. Add tomato paste and stir until smooth
  9. Add bell peppers and cook until tender
  10. Pour in heavy whipping cream and bring to a gentle boil
  11. Add chicken and mix to coat thoroughly
  12. Transfer to baking dish and bake at 350 for 30 minutes or until top browns
