Beef Enchilada Casserole

Ingredients
  

  • 3 lbs lean ground beef
  • 6 8 inch low carb wraps
  • 1 medium yellow onion
  • 1 bunch scallions
  • 2 pkgs Sargento Mexican 3 cheese blend
  • 3 pkgs taco seasoning
  • 4 cups red enchilada sauce
  • 1 tsp avocado oil

Equipment

  • Large rectangular baking pan
  • Large Sautee Pan
  • Measuring cup
  • Sharp knife
  • Aluminum foil

Method
 

  1. Thinly slice onion
  2. Slice scallion
  3. Brown ground beef
  4. Add onion and scallion
  5. Cook about 5 minutes
  6. Stir in season packets
  7. Oil baking pan
  8. Add half a cup of sauce to bottom of baking pan
  9. Place 2 tortillas in baking pan
  10. Layer in 1/3 of beef, sauce and cheese
  11. Place 2 tortillas
  12. Layer in beef, sauce and cheese
  13. Place last 2 tortillas and cover with remaining beef, sauce, and cheese
  14. Cover with aluminum foil and bake for 30 minutes
  15. Remove foil and bake for an additional 10 minutes
